WHere is a home-style interpretation of a drink found on a new drinks list. Designed as a batch premix which is packed with flavours of the festive period, which makes it excellent for your festive gathering. Reserve the remaining citrus syrup you can use for brunch beverages, puddings, or to make more rounds of bikinis.
Bikini
Yields 10 people
For the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Drink (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Directions
For the Syrup: Place every components in a pan, heat until it reaches a light boil, agitating so the sugar melts. Then, turn off the heat allowing it to cool down completely. Decant into an sealable bottle, close it and store in the refrigerator, it can be stored for around four weeks.
For the Cocktail Base: Combine the specified liquids into a large bottle, let it rest for 60 minutes, then strain , ideally through muslin, to ensure it's completely strained.
To serve: Add 85ml of your cocktail base into your cocktail shaker packed with ice, and agitate lightly for about 60 seconds to chill. Strain into an cold coupe glass or similar, top with a few cranberries and finish with a brief mist of the essential oil over the top.
